Pimento cheese, the caviar of the South, Atlanta Paté or just good ol’ minter cheese.  Homemade pimento cheese is so good and so easy to make. Last week Cody gave you 7 great places to buy pimento cheese, but why buy it when you can have homemade and you can tweak it and make it your own.  So I had to go out and make some homemade pimento cheese this weekend, and I’m blaming it all on Cody.

I use to think that it was so hard to make homemade pimento cheese.  I went on line and looked and looked until I found one that was easy and boom I did it and now, I only want to have it at home.

What’s Needed To Make Pimento Cheese?

Now that I’ve made it for a few years, it’s so easy to make and here is what is needed and how to make it.  Now keep in mind, this is my recipe and you can change it to your taste.

  • 8oz block of sharp cheddar cheese
  • 80z block of pepper jack cheese
  • 4 oz jar of diced pimento’s
  • 1 cup of mayonnaise
  • Any spices that you may want to add

The first and most important step is what you do to the cheese.  Do not buy pre shredded cheese.  It’s just not the same.  Get block cheese and shred it your self.  Once the cheese is shredded, drain your jar of pimento’s and mix them all in a bowl.  Now the mayonnaise part is where it can get a little tricky if you aren’t careful.  I use a cup for mine.  Keep this in mind, you can always add more, but you can’t take it out.

Once all the ingredients are in the bowl, I add a dash or two of chipotle seasoning.  Between the pepper jack cheese and the chipotle, it gives me just enough kick.  The chipotle is like the mayonnaise, you add more, you can’t take it out.   Mix all of the ingredients together, once it thickens up, do a taste test and see where you are.  If you need a little more mayonnaise, add it.  If you need a little more of any of the spices you like add them and mix some more.

You Now Have Homemade Pimento Cheese, What Now?

We’ll you dig in and eat.  Serve it with crackers, on white bread or just eat it with a spoon. You are good to go.  Now, this is just my thought.  The best way to eat pimento cheese is on a burger.  Replace the sliced cheese, put ya big on spoonful on the burger, close the grill for a few minutes and you are ready to go.  This is my favorite burger of all time, A pimento cheeseburger.  It can’t be beat and you are starting to see it on menus all over the C-S-R-A.

Once you get your recipe where you want it, and people start trying it and loving it, you will be asked to bring this to every gathering you attend.  It can be your go to and it doesn’t take long to fix so you will not have to put a lot of time in.
